I found some beautiful multi-colored Organic carrots at Trader Joe’s about a month ago, they are so pretty and sweet, and since then I’ve been buying a bag regularly and have been having a great time trying all sorts of recipes that showcase these colorful carrots. Today I’m sharing one of my favorites, perfect for summer, this delicious Rainbow Carrot Slaw with Ginger Sesame Dressing.

I love all types of slaws, they are such a great dish for summer and outdoor entertaining. The colorful carrots – all kinds of purples, oranges and yellows – are so pretty in this slaw and the Ginger Sesame Dressing complements their sweetness nicely. Cilantro provides freshness and a nice color contrast. (If you’re not a cilantro fan, green onions or parsley would be a good substitute.)

Homemade Ginger and Sesame Salad Dressing

I love making my own salad dressings. It is so easy to do and they are so fresh and delicious. Ginger and sesame is one of my favorite dressing flavor combinations. The ginger in this dressing comes from minced fresh ginger. The sesame comes from both sesame oil and toasted sesame seeds. Honey provides a touch of sweetness. You can easily adjust the amount of these ingredients to suit your tastes.

This Ginger Sesame Dressing pairs beautifully with the sweetness of the carrots. It also goes nicely with other types of slaws. I used this dressing on a mixture of shredded kale, broccoli, Brussels sprouts and red and green cabbage and it was really good. The Ginger Sesame dressing would be wonderful with green salads as well.

This colorful and crunchy Rainbow Carrot Slaw with Ginger Sesame Dressing is a great side dish for all sorts of grilled entrees. It is also a refreshing accompaniment to spicy dishes such as my Slow Cooker Chicken Curry. (I had leftovers of both for lunch today and they were so good together.) This delicious slaw is also great for a healthy snack, all on it’s own.

This flavorful Rainbow Carrot Slaw with Ginger Sesame Dressing can be made ahead of time and keeps well in the refrigerator and is a wonderful dish for a summer barbeque, potluck or picnic.
