Hi everyone, welcome to What’d You Do This Weekend? I hope everyone had a wonderful holiday weekend! We finally had some spring like weather here in Massachusetts last week, and some, but not all, of the snow has melted.

On Saturday morning, we did an outdoor egg hunt with the families with young kids in our neighborhood and the snow patches actually made for great hiding spots for eggs – so the remaining snow was good for something!

blackened shrimp po boy 2I absolutely love Po’Boys! And, I love blackened shrimp and seafood of any kind, plus I adore sweet potatoes. So, these Blackened Shrimp Po’Boys with Blackened Sweet Potato Fries had my name written all over them. I’ve only ever had Po’Boys at restaurants in New Orleans, so I cannot wait to make these at home. If you’re a fan of Po’Boys, or if you’ve never had one (believe me, you are in for a treat), be sure to check out Michelle’s recipe!

Light Chicken Caesar Pasta Salad from Jo and Sue

caesarchickenpastasalad5aWith the hint of spring weather we received last week, my mind has turned to spring dishes such as pasta salads and this Light Chicken Caesar Pasta Salad sounds wonderful! I love Caesar salad and love the idea to make it as a pasta salad, plus it’s lightened up, which is a bonus. Be sure to go get the recipe if you’d didn’t have a chance last week.
