Corned Beef Hash and Egg Casserole with Sun-Dried Tomatoes and Swiss Cheese – a hearty casserole that is full of flavor and so easy to make, perfect for a weekend brunch with family and friends.
I love brunch, it is one of my favorite meals to both make and, of course, eat. I love brunch because it is a meal usually enjoyed on the weekend and is typically a relaxed and leisurely affair. Also, for weekend brunch we tend to treat ourselves to hearty items that we don’t have everyday, such as corned beef hash.
When we used to live in New York City, before we had kids, my husband and I would go out to brunch nearly every weekend with family and friends. Corned beef hash was a common brunch menu item and always was a popular choice for our group.
These days, we have three young kids and tend to enjoy brunch at home. Since, I don’t have the time to spend all morning in the kitchen, I rely on convenience items, such as HORMEL® MARY KITCHEN® Corned Beef Hash.
Hearty and full of flavor, HORMEL® MARY KITCHEN® Corned Beef Hash is great on it’s own topped with some sunny side up eggs. It is also a wonderful addition to casseroles such as this delicious Corned Beef Hash and Egg Casserole with Sun-Dried Tomatoes and Swiss Cheese.
This past week, when I was doing my weekly grocery shopping at my local Market Basket, I picked up some cans of HORMEL® MARY KITCHEN® Corned Beef Hash, to have on hand for brunch, they are located in the Soup aisle.
This Corned Beef Hash and Egg Casserole with Sun-Dried Tomatoes and Swiss Cheese is so easy to prepare since it uses convenient HORMEL® MARY KITCHEN® Corned Beef Hash, and is great for a casual weekend brunch.
To prepare this casserole, first gather the ingredients including HORMEL® MARY KITCHEN® Corned Beef Hash, chopped onion, minced garlic, chopped sun-dried tomatoes, chopped fresh parsley, eggs, half and half and shredded Swiss cheese.
Next, in a large skillet over medium heat, sauté the HORMEL® MARY KITCHEN® Corned Beef Hash until it is warmed through and starts to crisp up a bit, about 6 minutes.
Add the onions and garlic and sauté for 3 more minutes. Then add the sun-dried tomatoes and some of the fresh parsley and stir to combine, about 1 minute. Remove the skillet from heat and set aside.
Next, add the eggs to a large mixing bowl, and whisk together. Add the half and half and part of the shredded Swiss cheese and whisk to combine.
Transfer the corned beef hash mixture to a prepared casserole dish, spreading evenly. Pour the egg mixture over the corned beef hash mixture.
Sprinkle the remaining cheese and parsley evenly over the top of the casserole. Finally, put the casserole in the preheated oven.
This Corned Beef Hash and Egg Casserole with Sun-Dried Tomatoes and Swiss Cheese will bake in the oven for 35-40 minutes until it is cooked through and begins to get a nice golden brown.

Corned Beef Hash and Egg Casserole with Sun-Dried Tomatoes and Swiss Cheese
Ingredients
- 1 (15 oz) can HORMEL® MARY KITCHEN® Corned Beef Hash
- ½ cup chopped onion
- 1 tablespoon minced garlic (from about 2 garlic cloves)
- ½ cup chopped, drained oil-packed sun-dried tomatoes
- 4 tablespoons chopped fresh parsley, divided
- 2 cups half and half
- 10 eggs
- 2 cups shredded Swiss cheese, divided
Instructions
- Preheat oven to 375°F. Lightly grease a 9 x 13-inch casserole dish.
- Sauté corned beef hash, in a large skillet, over medium heat until it is warmed through and starts to crisp up a bit, about 6 minutes.
- Add onion and garlic to skillet and sauté for 3 minutes.
- Add sun-dried tomatoes and 2 tablespoons fresh parsley to skillet and sauté to combine, about 1 minute.
- Transfer corned beef mixture to prepared casserole dish, spreading evenly.
- In a large mixing bowl whisk together eggs, add half and half and 1 ½ cups Swiss cheese and whisk to combine.
- Pour egg mixture over corned beef mixture in casserole dish.
- Sprinkle remaining ½ cups Swiss cheese and 2 tablespoons fresh parsley evenly over top of casserole.
- Bake casserole in the preheated oven for 35-40 minutes until it begins to get a nice golden brown and is cooked through (a knife inserted into center comes out clean).
