Settling Into Our New House
It’s been nearly 8 weeks since we moved into our new house in West Chester. After lots and lots of packing and even more organizing, it is beginning to feel like home. We still have lots more to do, but we are settling in nicely.
One of the advantages of moving from Massachusetts down to Pennsylvania, is that we are closer to my parents, who live in Maryland. So, now our three kids will get to see their Grammy and Grandpa more often.
A Healthy Low-Fat, High-Protein Dip
Case in point, my parents were recently up for a get together for my dad’s birthday. Every get together needs a dip, so I made this delicious Creamy Dill Dip.
I decided to go the healthy route and used a mixture of non-fat Greek yogurt and light sour cream for the base. So, this Creamy Dill Dip is both low in fat and high in protein. It is a dip you can feel good about dipping into.
Easy Preparation
This Creamy Dill Dip is so easy to prepare. Just mix together non-fat Greek yogurt and light sour cream. Then mix in chopped fresh dill, chopped green onions, salt and some apple cider vinegar. I let the dip sit a bit in the refrigerator to let the flavors develop.
The resulting dip is so full of flavor. The freshness of dill really comes through nicely. I served this Creamy Dill Dip with a colorful mixture of cut-up veggies and some potato chips. This creamy dip was a big hit at our get together and gone in no time at all.
This Creamy Dill Dip takes just minutes to prepare and is so full of flavor. Along with some veggies and potato chips, it is the perfect addition to your next party, game day or other get together.
Creamy Dill Dip
Ingredients
- 1 cup non-fat Greek yogurt
- 1 cup light sour cream
- ¼ chopped fresh dill
- 2 green onions, chopped (about 2 tablespoons)
- ½ teaspoon salt
- 2 teaspoons apple cider vinegar
- salt and freshly ground pepper, to taste
- additional fresh dill, for garnish (optional)
- cut-up veggies, potato chips, and/or pretzels for serving
Instructions
- Add yogurt and sour cream to a medium sized mixing bowl and whisk to combine.
- Add in dill, green onions, salt and apple cider vinegar, mix until well combined.
- Season to taste with additional salt and freshly ground pepper.
- Refrigerate for at least 30 minutes to allow flavors to develop (optional).
- Transfer dip to serving bowl, sprinkle with additional fresh dill, if desired, and serve with cut-up veggies, potato chips, and/or pretzels.
