An Easy Crock Pot Recipe with Minimal Preparation
I love using my crock pot to make dinner. That way, I can do the dinner preparations in the morning. I can put everything in the slow cooker, let it simmer away all day, and come home later to a delicious, ready to serve, meal.
Some crock pot recipes require a bit of prep work, to cut and brown meat and/or to chop and saute vegetables. Other crock pot recipes, require minimal prep, you just add the ingredients to the slow cooker, set it and go. This Crock Pot Creamy Chicken and Wild Rice is of the latter, minimal prep variety.
I like to have both types of crock pot recipes in my repertoire, because sometimes I have the time for a lot of prep work, and sometimes, I do not.
This Crock Pot Creamy Chicken and Wild Rice is my mom’s recipe. She makes it every summer, when we vacation with her and my dad in Myrtle Beach. Their place is right on the ocean and when we’re there on vacation, no one wants to spend hours in the kitchen, we’d all rather be on the beach.
So, during our stay, my mom relies on a collection of easy, minimal prep, recipes, such as this Crock Pot Creamy Chicken and Wild Rice. My 8-year old son absolutely loves this Crock Pot Creamy Chicken and Wild Rice and he calls it simply, “Grammy’s Delicious Chicken.” Since my son loves it so much, as does the rest of my family, I often make it for us at home.
How To Make Crock Pot Creamy Chicken and Wild Rice
This Crock Pot Creamy Chicken and Wild Rice requires minimal prep and is so easy to make. It relies on some convenience items including cream of chicken soup – we use the low fat and low sodium variety – and a packaged seasoned wild rice mix.
First, add the cream of chicken soup along with some water to the crock pot and whisk to combine. Then stir in the rice and add chicken breasts and some carrots that have been peeled and cut into large chunks.
Put the lid on the slow cooker and set it to either low or high temperature, and that’s it. In about four to eight hours, depending on the temperature setting, a delicious meal is ready to serve.

This Crock Pot Creamy Chicken and Wild Rice is wonderful on it’s own. I also like to sprinkle some fresh parsley on top and serve with a tossed green salad.

Ingredients
- 2 (10.75 oz) cans cream of chicken soup (I use the low fat and low sodium variety)
- 1 ½ cans (from the chicken soup) water
- 1 (6 oz) package seasoned long grain and wild rice mix
- 2 ½ - 3 lbs boneless chicken breasts
- 4 large carrots, sliced into large chunks
- chopped fresh parsley, for topping (optional)
Instructions
- Spray 5-6 quart slow cooker with cooking spray.
- Add soup and water to the slow cooker and whisk to combine.
- Stir in the wild rice mix.
- Add chicken and carrots to the slow cooker, turning to coat.
- Cover and cook on HIGH heat for 4-5 hours or on LOW heat for 7-8 hours.
- Cut chicken into chunks and slice the carrots into ¼ inch slices, if desired.
- Serve and top with chopped fresh parsley, if desired.

Fantastic dish Joy … I used a slow cooker bag to make the cleanup even easier, and tried a wild rice/quinoa mix. The chicken stayed so moist. Definitely a keeper.

I too love a good crockpot meal. The crockpot is this magic tool. I pull out every once in a while and like you said you prep in the morning, put it in the crockpot and at dinner time tada dinner is done. This meal looks like a winner to me.
