Fresh Corn and Herb Salad – this light and refreshing salad is full of flavor and a great side dish for a summer barbeque.
Fresh Local Corn
One of my favorite parts about the summertime, is all of the wonderful, fresh local produce. Corn, in particular, is one of my family’s favorite summer vegetables. We are currently up at our lake house in Vermont, where it’s not quite corn season, but we are getting some delicious corn from the southern states in our markets.
My kids’ favorite way to enjoy corn is on the cob. I’ve mentioned that I often like to prepare a few extra cobs to use in salads such as my Tomato, Corn and Black Bean Salad. Today, I have a new favorite corn salad to share, perfect for using up leftover corn on the cob, this delicious Fresh Corn and Herb Salad.
Simple Preparation
For this Fresh Corn and Herb Salad, I wanted the corn to be the star, so I kept it simple. I had some fresh dill on hand and knew it would pair beautifully with the corn.
I tossed the corn, removed from the cobs, along with some of the chopped dill as well as some chopped fresh mint and chives from my herb garden, and some red onion, in a simple vinaigrette. The resulting salad, is so fresh, delicious and full of flavor.
This delicious Fresh Corn and Herb Salad is so easy to prepare and is perfect for a summer barbeque or picnic. It would also be a great dish, I would recommend doubling the amount, for a party or potluck.

Fresh Corn and Herb Salad
Ingredients
- 2 tablespoons apple cider vinegar
- 2 tablespoons extra virgin olive oil
- 3 cups cooked corn kernels (from about 3 large ears)
- ΒΌ cup thinly sliced red onion (in about 1-inch pieces)
- 2 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh chives
- 1 tablespoon chopped fresh mint
Instructions
- In a medium sized mixing bowl, whisk together the apple cider vinegar and olive oil to make a dressing.
- Add corn, red onion, dill, chives and mint and toss to combine.
- Transfer to serving dish and serve immediately or refrigerate until ready to serve.
Very nice, ridiculously easy, perfect for the season! Excellent use for leftover corn (if you ever have any). Got rave reviews from my guests.

Corn is always a fave of mine! We have have a cob (or 4) in the fridge and I love how easy it is to prepare. In addition of course are the tinned ones! This looks so amazing and yummy!
