Greek Quinoa Salad – a gorgeous, fresh, salad combining delicious Greek flavors with healthy, nutty, quinoa – a great dish for your next barbeque, potluck or picnic, it is also wonderful for a light meal all on it’s own.
Today was the last day of school for my 7-year old son (they had to make up a lot of snow days) and summer vacation has finally begun. Now that my twin girls have turned 3-years old and no longer take naps, I’m planning to take a lot of day trips with my three kids this summer. Lots of day trips means I’ll be packing lots of picnic lunches and one of my favorite things to take on a picnic is quinoa salads.
I’ve already shared a couple of my favorite quinoa salads here including my Curried Quinoa and Chickpea Salad with Carrots, Apples & Raisins and my California Quinoa Salad with Black Beans and today I’m sharing a new favorite, this wonderful Greek Quinoa Salad.
I absolutely love Greek salads, such as my Chopped Greek Salad, and thought the flavors would go well in a quinoa salad, and that certainly is the case.
The combination of the quinoa with colorful tomatoes, cucumber, fresh parsley and red onion along with feta cheese and kalamata olives — all tossed together with a lemony vinaigrette — is so flavorful and absolutely delicious.
This colorful Greek Quinoa Salad can be made ahead of time and keeps well in the refrigerator and is a great dish for a summer barbeque, potluck or picnic.
This flavorful Greek Quinoa Salad is also a wonderful accompaniment to grilled entrees, we’ve enjoyed it with grilled chicken, it would also go well with grilled steak or fish, or just simply with some grilled veggies for a delicious meatless meal.
Greek Quinoa Salad
Ingredients
- 1 cup quinoa
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon red wine vinegar
- ½ teaspoon dried oregano
- 2 cups grape tomatoes, halved (I use a combination of red and yellow tomatoes)
- 1 cup diced cucumber (about ½ a medium cucumber)
- ¼ cup chopped fresh parsley
- ¼ cup diced red onion
- ½ cup pitted Kalamata black olives
- ½ cup feta cheese, diced (about 4 ounces)
- salt and freshly ground pepper to taste
Instructions
- Cook the quinoa according to the package directions; set aside to cool.
- In a large bowl, whisk together the olive oil, lemon juice, red wine vinegar and dried oregano.
- Add in the cooled quinoa, tomatoes, cucumber, fresh parsley, red onion, Kalamata olives and feta cheese and toss to combine.
- Season with salt and pepper to taste.
- Serve or refrigerate.

I love a quinoa salad, we do them often at the catering company I work for, it seems his is similar to this, but the lemon vinaigrette sounds incredible! I am pinning this to my menu board so I can make it!! Thanks for the recipe.
