Hot Cheesy Mexican Corn Dip – a delicious, hot dip with corn, green chiles and lots of melted Kraft Natural Shredded Cheese, perfect for sharing with family and friends on a cozy fall afternoon.
Now that the weather has turned cooler, and we are in the midst of fall, one of my family’s favorite weekend activities is to light a fire in our fireplace and spend a cozy afternoon together. We play games, read books and, of course, enjoy some delicious things to eat.
Cooler weather calls for comfort food and one of our favorites is a hot dip with lots of ooey gooey melted cheese.
With cozy comfort food in mind, my twin 3-year old girls and I headed over to our local Walmart for our weekly grocery shopping trip. Since, I knew I wanted to make a hot cheesy dip for us to enjoy during the weekend, we first went over to the dairy section.
I spotted these nice, big, one pound bags of Kraft Natural Shredded Cheese, including a Mexican Four Cheese variety. I thought this would be perfect for making a hot cheesy dip. So, I picked up a bag and decided to make a Mexican dip with corn and green chiles.
As corn and green chiles are no longer in season, I also picked up some cans of corn and green chiles. Cans are a great substitute when fresh produce is not available and they are so convenient.
How To Make Hot Cheesy Mexican Corn Dip
Back at home, when it was time to prepare our Hot Cheesy Mexican Corn Dip, I gathered the ingredients, including the Kraft Natural Shredded Cheese, corn, green chiles, and some mayonnaise, sour cream and cream cheese.
This dip is so easy to put together. First, you add all of the ingredients to a large mixing bowl, including the Kraft Natural Shredded Cheese, corn, green chiles, mayonnaise, sour cream and cream cheese.
Then you mix it all together and transfer it to a baking dish. Finally, you sprinkle some more Kraft Natural Shredded Cheese on top and put it in the oven.
This dip will bake in the oven for about 30-40 minutes, or until it is hot, bubbly and the top is starting to get a little bit golden brown.
This ooey, gooey Hot Cheesy Mexican Corn Dip is so delicious. It is the perfect comfort food for my family to enjoy on a cozy Sunday afternoon in front of a crackling fire in our fireplace.
We scooped up this cheesy dip with tortilla chips, my 7-year old son’s favorite corn chips, carrot sticks and cucumber spears. Slices of crusty bread and assorted crackers would also be a wonderful accompaniment to this Hot Cheesy Mexican Corn Dip.
Now that we are in the middle of fall and the weather is cooler outside, my family is in the mood for some comforting dishes such as this Hot Cheesy Mexican Corn Dip. This delicious dip is the perfect comfort food to enjoy with family and friends on a cozy fall afternoon.
This Hot Cheesy Mexican Corn Dip would also be a wonderful addition to a fall party, game day or other get together.

Hot Cheesy Mexican Corn Dip - a delicious, hot dip with corn, green chiles and lots of melted Kraft Natural Shredded Cheese, perfect for sharing with family and friends on a cozy fall afternoon.
Ingredients
- 2 (15.25 oz) cans whole kernel corn, drained
- 2 (4.5 oz) cans chopped green chiles, drained
- 3 cups Kraft Natural Shredded Cheese – Mexican Four Cheese, divided
- ½ cup light mayonnaise
- ¼ cup light sour cream
- ¼ cup cream cheese
- tortilla chips, corn chips, crusty bread slices, crackers and/or cut-up vegetables for serving
Instructions
- Preheat oven to 350°F. Lightly grease an 8 x 8-inch (2 quart) baking dish.
- Add corn, green chiles, 2 cups of the Kraft Natural Shredded Cheese – Mexican Four Cheese, mayonnaise, sour cream and cream cheese to a large mixing bowl.
- Stir mixture together with a spatula or spoon until well combined.
- Transfer mixture to prepared baking dish.
- Sprinkle remaining 1 cup Kraft Natural Shredded Cheese – Mexican Four Cheese evenly on top.
- Bake in preheated oven for 30 – 40 minutes or until dip is hot, bubbly and starting to turn a bit golden brown on top.
- Serve dip with tortilla chips, corn chips, crusty bread slices, crackers and/or cut-up vegetables.

Really simple, but really versatile. This would be a great way to use up some leftovers hanging around in the fridge. Might be good with some black beans mixed in.
