Healthy Dips
I’ve mentioned my love of dips, especially healthy dips filled with wholesome ingredients that can also can serve double or even triple duty, as sauces, sandwich fillings or as light meals on their own along with fresh veggies and toasted pita bread.
I’ve shared some of my family’s favorite healthy dips including my Roasted Red Pepper Hummus and Roasted Eggplant Dip. Today, I have a new favorite to share, this delicious Kale and Artichoke Greek Yogurt Dip.
I used 0% milkfat Greek yogurt to make this dip, so it is low in calories, fat free and full of protein; and with the fiber and all the vitamins from the kale, this healthy, flavorful dip is one you can feel good about eating.
Full of Flavor
I thought the combination of kale and artichoke hearts would go well in a healthy dip. That certainly is the case. They do go so well together along with the Greek yogurt. Fresh garlic and ground cumin give a bit of a spicy kick and fresh lemon juice and honey provide brightness and balance. Altogether, this healthy dip is creamy, delicious and so full of flavor.
I enjoyed this Kale and Artichoke Greek Yogurt Dip along with some carrot and celery sticks and pita chips for a light lunch today. Crackers, pretzels and slices of crusty bread would also be wonderful accompaniments to this flavorful dip.
This creamy dip would also make a great sandwich spread or sauce for grilled or poached chicken or fish. It would also be a wonderful sauce to toss with pasta or quinoa, especially topped with some freshly grated Parmesan cheese.
This delicious Kale and Artichoke Greek Yogurt Dip, along with fresh veggies and pita chips is perfect for a party, game day or other get together. This light and healthy dip is also wonderful as a sauce or sandwich spread.
