Salsa Verde

I fell in love with salsa verde while traveling around in Mexico. Salsa verde, or “green salsa” is made with tomatillos, which are kind of a green tangy type of tomato. I love them.

Now, anytime I see something “verde” on a restaurant menu, I’m ordering it. Or, if I come across a recipe such as this Chili Verde, which I’ve adapted from Better Homes and Gardens, I just have to try it.


Slow Cooker Pork Chile Verde

This Slow Cooker Pork Chili Verde has become a family favorite. My girls gobble it up. My son loves the pork, though is not yet a bean lover (I keep trying), so I usually end up making him some white rice to go with this.

My parents came to visit us this week in Massachusetts, on their way home to Maryland from a trip to Canada and Maine. They were going to be here for dinner, but they didn’t know what time.

So, it was a perfect time for me to pull out the slow cooker (or as we tend to call it, the crock pot). I love using my slow cooker. Dinner can simmer away all day, be ready for a 5:30pm dinner for the kids, then be kept warm for hours until guests arrive and it’s time for dinner number two.

This flavorful Slow Cooker Pork Chili Verde is so easy to make, just put all the ingredients in your slow cooker in the morning. It simmers away all day and when you get home, dinner is ready and your house smells amazing.

This delicious Slow Cooker Pork Chili Verde makes a lot and is also great for a casual dinner party, potluck, tail gate, game day or other fall get together.
