Tomato and Corn Season
August is almost at its end, but summer is still in full swing here in New England. We have been enjoying a string of gorgeous sunny days at our lake house in Grande Isle, Vermont. We are now at the height of tomato and corn season. Both are available in abundance, and I’m in heaven as they are two of my very favorite summer vegetables.
Both tomatoes and corn are at their best when they are fresh and local. I find that simple preparations, such as this Tomato, Corn and Black Bean Salad, are the way to go to really let the fresh flavors of the veggies shine.
My three kids all love corn on the cob. It’s a staple at our house when corn is in season. Whenever I prepare corn on the cob, whether on the stove top or on the grill, I like to make a few extra ears for use later on in salads, such as this. Luckily, I had done just that last Friday. And, yesterday, while perusing my fridge in search of inspiration for dinner that evening, I was happy to find three cooked ears of corn.
I was also in possession of a gorgeous array of colorful cherry tomatoes along with some glorious smelling basil, all courtesy of my neighbors’ garden.
Easy Preparation
I decided to combine the corn, tomatoes and basil along with some black beans and fresh parsley. I tossed it all in a fresh lemon vinaigrette. It was so easy to prepare and the resulting Tomato, Corn and Black Bean Salad smelled wonderful and was so delicious and full of flavor.
We enjoyed this Tomato, Corn and Black Bean Salad along with some grilled sausages for dinner that evening. I happily finished off the leftovers for lunch today.
This fresh and flavorful Tomato, Corn and Black Bean Salad is a wonderful accompaniment to all sorts of grilled entrees. It is a great dish for a barbeque, potluck or picnic. This colorful salad is also perfect for a healthy meal or snack anytime.
Tomato, Corn and Black Bean Salad
Ingredients
- 2 cups cherry tomatoes, halved
- 2 cups cooked corn kernels (from about 3 ears)
- 1 (15 oz) can black beans, rinsed and drained
- 2 tablespoons chopped fresh basil leaves
- 2 tablespoons chopped fresh parsley
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon red wine vinegar
- 2 tablespoons olive oil
- salt and freshly ground pepper to taste
- additional chopped basil and parsley leaves for serving (optional)
Instructions
- Add tomatoes, corn, black beans, basil and parsley to a large bowl.
- In a small bowl, whisk together lemon juice, red wine vinegar and olive oil to make a dressing.
- Pour dressing over tomato, corn and black bean mixture, toss to combine.
- Season with salt and pepper to taste.
- Serve salad, top with additional fresh basil and parsley leaves if desired.

Oh this is my kind of dish. I always have fresh corn on the cob around too, this time of year. We have so many local resources for it. Plus we’ve always got black beans so I can whip this up in no time.
