Butterfly Shrimp Pasta Primavera – linguini and colorful vegetables are tossed in a creamy sauce and topped with crispy butterfly shrimp, for a delicious, coastal inspired meal that the whole family will enjoy.
I love seafood and have ever since I was young. I have such fond memories of my parents taking me, as a kid, to seafood restaurants in Maryland, where I grew up, and on the South Carolina coast, where we would go on vacation during the summer.
These days, I still live on the East coast, albeit a little farther north in Massachusetts and I have three young kids of my own. Now, I love to make coastal inspired seafood dishes for my family.
My kids love butterfly shrimp and I like to add it to some of our favorite recipes, such as pasta primavera. Pasta primavera, is a delicious dish on it’s own, adding butterfly shrimp, takes it up a notch and adds that wow factor.
When choosing seafood to prepare at home, I want high-quality products, and as a busy mom, I also look for convenience. Which is why I love SeaPak® products, they offer a variety of great quality, costal inspired seafood products that I can keep stocked in my freezer.
I like to keep my freezer stocked with Party Size boxes of SeaPak Butterfly Shrimp, for use in meal recipes, and SeaPak Coconut Shrimp, to have on hand for an easy and delicious appetizer.
I didn’t initially think to look for quality seafood products in the frozen section at my local Walmart store, but that is exactly where I found SeaPak products.
Now, when I do my grocery shopping at Walmart, I’m sure to pick up my favorite varieties of SeaPak products including Party Size packages of SeaPak Butterfly Shrimp and Coconut Shrimp. Both are located in the Frozen section at Walmart.
It is so convenient to have SeaPak products in our freezer, so that our family has access to great quality seafood to enjoy anytime we like, and I can prepare dishes such as this Butterfly Shrimp Pasta Primavera.
This delicious Butterfly Shrimp Pasta Primavera is perfect for a family dinner or casual entertaining. I like to include lots of colorful veggies in my pasta primavera. So, there are a lot of ingredients in this recipe, but it is still really quick and easy to prepare. I like to cut up some of my veggies either the evening before or morning of the day I plan to make this dish. That way, when dinner time rolls around, most of the prep work is already done and dinner is on the table in under 30 minutes.
How to Make Butterfly Shrimp Pasta Primavera
First, bake the SeaPak Butterfly Shrimp according to package directions, the shrimp will need about 11-12 minutes in the oven. Also, cook the linguini in a large pot of boiling water according to package directions.
While the shrimp is baking and the pasta is cooking, gather the vegetables and ingredients for the sauce including broccoli florets, cut-up red bell pepper, sliced carrots, baby bella mushrooms, chopped onion, minced garlic, flour, white wine, half and half, shredded Parmesan cheese, frozen peas and chopped fresh basil.
Next, in a large skillet over medium-high heat, sauté the broccoli, red bell pepper and carrots in olive oil, until they start to get tender, about 5 minutes. Remove the vegetables from the skillet and set aside.
In the same skillet, sauté the mushrooms in butter until softened, about 3 minutes. Remove the mushrooms from the skillet, using a slotted spoon, and add to the broccoli mixture.
Add the onion and garlic to the same skillet and sauté for a few minutes. Then add the flour and stir to combine.
Next, add the white wine and stir, scrapping up any brown bits. Then, add the half and half and whisk to combine.
Add the Parmesan cheese and whisk until melted. Season the sauce with salt and pepper to taste. Add the broccoli and mushroom mixture, along with the peas and fresh basil to the sauce, and stir to combine.
In the meantime, when the shrimp is done baking, remove from the oven and set aside. When the linguini is done cooking, drain, reserving about 1/2 cup of the cooking liquid. Return the linguini to the pasta pot.
Pour the sauce and vegetable mixture over the linguini and give it a good toss to combine, adding some of the reserved pasta liquid, a tablespoon or two at a time, as needed.
Transfer the pasta mixture to a serving dish and top with the butterfly shrimp. Garnish with basil, if desired, and serve with additional shredded Parmesan cheese.
My kids were absolutely delighted when I served this Butterfly Shrimp Pasta Primavera for dinner and they saw all of the crispy butterfly shrimp on top of the pasta.
The addition of the SeaPak Butterfly Shrimp, really elevates the pasta primavera and makes a favorite dish, an amazing dish.
Pasta primavera, linguini and colorful vegetables tossed in a creamy sauce, is even more delicious when topped with butterfly shrimp and is perfect for a coastal inspired meal that the whole family will enjoy.
