I’ve mentioned that I like to keep a batch of homemade cornbread mix on hand in my pantry. That way I can quickly and easily make a batch of homemade cornbread, muffins or topping anytime I like. I’ve shared some recipes using my homemade mix, including Orange Honey Cornbread and Tex Mex Chicken Casserole with Cornbread Topping.
Today, I have a new recipe to share that uses my homemade cornbread mix, these soft and delicious Creamed Corn Cornbread Muffins.
How to Make Homemade Cornbread Mix
To make a batch of homemade cornbread mix, simply whisk together flour, corn meal, sugar, baking powder and salt in a large mixing bowl. Then transfer the mixture to an airtight container. From there, just scoop out what you need to easily whip up homemade cornbread, topping or muffins such as these Creamed Corn Cornbread Muffins.
Last Friday, my 4-year old twin girls were in the mood to bake. We were having chili for dinner that evening, so I decided we would make a batch of cornbread. I also had some cans of creamed corn in the pantry, so I decided to use some to make Creamed Corn Cornbread Muffins.
How to Make Creamed Corn Cornbread Muffins
These Creamed Corn Cornbread Muffins are so easy to make and take only a few minutes to prepare. My girls mixed together some of the homemade cornbread mix, melted butter, eggs and creamed corn in a large mixing bowl. I then transferred the batter to a muffin pan and baked it in the preheated oven for about 12-13 minutes.
The resulting Creamed Corn Cornbread Muffins are so moist and delicious and were a wonderful accompaniment to our chili on Friday evening. The leftovers were great for breakfast.

Creamed Corn Cornbread Muffins
Notes
Use the remaining Homemade Cornbread Mix to make more Creamed Corn Cornbread Muffins or to make cornbread topping for casseroles or to make regular cornbread or cornbread muffins.
To make regular cornbread or cornbread muffins using the Homemade Cornbread Mix, add 2 cups of the mix, ½ stick (¼ cup) melted butter, 1 cup 1% milk, 2 beaten eggs and ¼ cup honey to a large mixing bowl and whisk to combine. Transfer batter to a 12-cup muffin tin or 8-inch x 8-inch baking pan and place in the preheated 400°F oven. The muffins will bake for about 12-13 minutes, the cornbread will bake for about 20 minutes or until a toothpick inserted into the middle comes out clean.
Ingredients
for the homemade cornbread mix
- 3 cups flour
- 3 cups corn meal
- 3 tablespoons baking powder
- 2 teaspoons salt
- ½ cup sugar
for the Creamed Corn Cornbread Muffins
- 2 eggs
- 2 cups homemade cornbread mix
- ½ stick (¼ cup) melted butter
- 1 (14.75 oz) can creamed corn or cream style corn
Instructions
for the homemade cornbread mix
- Add all ingredients for cornbread mix to a large mixing bowl and whisk to combine.
- Transfer mixture to a 2-quart airtight container and secure the lid. You will need 2 cups of the cornbread mix to make the Creamed Corn Cornbread Muffins. Store the remaining cornbread mix for later use, see Notes.
for the Creamed Corn Cornbread Muffins
- Preheat oven to 400°F. Lightly grease a 12-cup muffin pan.
- Beat eggs in a medium sized mixing bowl.
- Add 2 cups of cornbread mix, melted butter and creamed corn to mixing bowl and stir to combine.
- Transfer mixture into prepared muffin pan, filling each cup evenly, about 2/3rd of the way full each.
- Bake in the preheated oven for 12-13 minutes or until cooked through (a toothpick inserted in a muffin should come out clean).
These were delicious. I found this recipe after opening a can of creamed corn instead or regular corn for a Mexican dish. .I’m not one to waste

The muffin recipe calls for mix, eggs, butter, and creamed corn. The notes indicate you also add honey and milk.
Is the honey and milk part of the muffin recipe or an option?
Hi, the recipe for Creamed Corn Cornbread Muffins does not contain honey or milk. However, if you make this recipe, you’ll have leftover cornbread mix. You can use the leftover mix to make regular cornbread or cornbread muffins, just follow the directions in the notes, which do include honey and milk.
Tried this recipe ytd night, and it was the best thing ever to satisfy my kenny rogers corn muffin when there is no such thing to be found in Melbourne near me. I was so happy! Hehe and gobbled up 3 fresh from the oven 🙂 thanks for sharing this really lovely recipe

Hi Beth, I haven’t tried this particular recipe with a mini muffin pan, though based on other similar recipes, I’d suggest 15 – 22 minutes or until a toothpick inserted into the middle of a muffin comes out clean. If you give it a try, please let me know how it goes!

These were amazing! The only change I made was I added some shredded cheese before cooking.. and that’s because cheese makes everything better 😉

The recipe is for a homemade cornbread mix which can then be used to make multiple batches of Creamed Corn Cornbread Muffins (or to make cornbread topping for casseroles or to make regular cornbread or cornbread muffins). The mix makes about 6 cups and does include 3 tablespoons of baking powder (you can reduce the amount if you find it overpowering). You can then use part of the mix (2 cups) to make a batch of Creamed Corn Cornbread Muffins. Hope you give it a try and enjoy!
