Easy Chicken Fried Rice – skip the takeout, this delicious fried rice is so easy to make and ready in under twenty minutes.
Everyone in my family loves rice, especially my three young kids. We enjoy it in all formats including as a side dish, in stir fries and in casseroles. However, I don’t always have the time to make rice from scratch, especially on busy weeknights.
Veetee Dine In Rice
So, I was delighted when Veetee sent me some of their Dine In Rice products to try out. Veetee Dine In Rice products come in convenient packages that can go right into the microwave.
There are a variety of flavors and they have a shelf life of up to 12 months. My favorite part is that they take only 2 minutes to prepare and the rice is fluffy and delicious, just like from scratch.

Fried rice is one of my family’s favorite rice dishes. I typically only make it when I have leftover rice from takeout. As I mentioned before, it can often be too time consuming to prepare rice from scratch. Now, that I have Veetee Dine In Rice, I can make fried rice anytime I like.
I decided to first use the Veetee Dine In Basmati Rice to make my Chicken Fried Rice. This fried rice is so easy to make and can be prepared in under 20 minutes.
How to Make Easy Chicken Fried Rice
First, create a marinade by whisking together sesame oil, soy sauce and cornstarch. Then add cut up chicken and toss to coat the pieces.
While the chicken is marinating, gather the other ingredients, including vegetable oil, chopped onion, minced garlic, two packages of Veetee Dine In Basmati Rice, peas, soy sauce and eggs. Heat the oil in a wok over medium high heat and sauté the onion and garlic until softened, about two minutes.
Add in the chicken and sauté until cooked, about 5 minutes. While the chicken is cooking, microwave the rice. Add the cooked rice, peas and soy sauce to the wok and stir to combine.
Make a well in the center of the rice mixture. Add the eggs to the well and let them set up and cook for a couple of minutes. When the eggs are partially cooked, turn off the heat and stir them into the rice mixture. The hot rice will continue to cook the eggs.
And, that’s it. A delicious meal is ready to serve and dinner is on the table in under twenty minutes.
I like to serve this Easy Chicken Fried Rice along with some sliced green onions for sprinkling on top.

Easy Chicken Fried Rice
Ingredients
- 1 tablespoon sesame oil
- 4 tablespoons soy sauce, divided
- 2 teaspoons cornstarch
- 1 ½ pounds boneless skinless chicken breast, cut into 1 ½-inch x ½-inch pieces
- 1 tablespoon vegetable oil
- 1 cup chopped onion (from about 1 medium onion)
- 1 tablespoon minced garlic (from about 2 garlic cloves)
- 2 (9.9 oz) packages Veetee Dine In Basmati Rice
- 1 cup frozen peas, thawed
- 3 eggs
- sliced green onions, for topping (optional)
Instructions
- In a medium sized mixing bowl, whisk together sesame oil, 2 tablespoons soy sauce and cornstarch to make a marinade.
- Add chicken to mixing bowl and toss to coat the pieces with the marinade. Set aside.
- Heat vegetable oil in a large wok over medium high heat. Add onion and garlic to wok and sauté for two minutes.
- Add chicken to wok and sauté until cooked, about 5 minutes.
- While chicken is cooking, microwave the rice according to package instructions.
- Add cooked rice, peas and remaining 2 tablespoons soy sauce to wok and stir to combine.
- Reduce heat to medium. Create a well in the center of rice mixture. Crack eggs into well and let sit until eggs set up a bit and are partially cooked, about 2-3 minutes.
- Turn off heat, stir eggs into rice mixture. The hot rice will continue to cook the eggs.
- Serve fried rice along with sliced green onions for topping, if desired.
this looks so delicious! My husband hates eggs, so I never make Frittata’s which is a shame. Have you tried freezing this or something similar. I’m thinking for my breakfast or lunch, I could make ahead. Let me know, much appreciated!

This sounds delicious. My biggest issue has always been not making rice a day ahead for making fried rice. This rice product looks perfect so I can skip that step altogether!
