Fettuccine with Creamy Tomato and Sausage Sauce – a delicious, savory, creamy tomato and sausage sauce, served over pasta, is a hearty and comforting meal, perfect for a chilly fall evening.
Sometimes there is nothing better than a hearty bowl of pasta, comforting and warm, on a chilly fall evening. This Fettuccine with Creamy Tomato and Sausage Sauce is one of my favorites.
I’ve been making this dish for years for myself and my husband and for adult guests. However, last week was the first time I made it for my kids. I wasn’t sure how it’d go over with my son, because he usually doesn’t like tomato based sauces, but he absolutely loved it. Yay!
This dish is so rich and luscious, it’s surprising how quick and easy it is to put together. It’s perfect for a special family dinner, it’s also great for entertaining.
The original recipe is from Bon Appétit, I’ve adapted it by tweaking the ingredients and lowering the heat level. If you prefer your pasta sauce spicy, you can increase the amount of crushed red pepper.
Sage is one of my favorite spices and it really comes through in this sauce, so savory and delicious. If you don’t have sage, basil, either dried or fresh, also works well. I’ve also made this dish using bowtie pasta, any shape that can hold up to a hearty sauce will work nicely.
Fettuccine with Creamy Tomato and Sausage Sauce
Ingredients
- 1 tablespoon olive oil
- 1 cup chopped onion
- 3 garlic cloves, minced
- 1 lb sweet Italian sausages, casings removed
- ½ cup whipping cream
- 1 (28 oz) can diced tomatoes
- ¼ teaspoon Italian seasoning
- 1 tablespoon dried sage
- 1/8 teaspoon crushed red pepper
- 12 oz fettuccine
- salt and freshly ground black pepper to taste
- freshly grated Parmesan cheese (optional)
Instructions
- Heat olive oil in large heavy pot over medium heat. Add onion and garlic and sauté until beginning to soften, about 3 minutes.
- Add sausages and sauté until no longer pink, breaking up with spoon, about 5 minutes.
- Add in whipping cream and simmer for 5 minutes.
- Add in tomatoes, Italian seasoning, sage and crushed red pepper. Simmer until sauce thickens, stirring occasionally, about 15 minutes.
- While sauce is simmering, cook fettuccine, according to package directions, in a large pot of salted boiling water until al dente.
- Season sauce with salt and black pepper to taste.
- Serve sauce over fettuccine, top with freshly grated Parmesan cheese, if desired.
