Banana bread is always a big hit at our house, with both the grownups and the kids. These Spiced Banana Bread Mini Loaves are a family favorite and I make them all the time throughout the year.
Freeze Your Ripe Bananas for Use in Baking Recipes
These Spiced Banana Bread Mini Loaves are so easy to make and a great way to use up overripe bananas. I typically buy a bunch of bananas every week, sometimes they all get eaten, sometimes not.
I like to freeze any ripe or overripe bananas that can’t be used right away. To freeze, I just add the bananas, in their peels, to a resealable bag and place it in the freezer. I then pull the frozen bananas out when needed, to make baked goods such as these Spiced Banana Bread Mini Loaves. To use frozen bananas, just let them defrost on the counter or in the fridge, before peeling and using.
About a month ago, our family moved from Carlisle, MA to Pennsylvania. Before the move, I tried to empty out both the fridge and freezer as much as possible. I came across a bag of frozen, overripe bananas and decided to make these Spiced Banana Bread Mini Loaves.
I use cinnamon, nutmeg and cloves in these Spiced Banana Bread Mini Loaves. This spice combination adds such a nice flavor which complements the banana nicely and gives the loaves an absolutely amazing aroma.

A slice or two of these delicious Spiced Banana Bread Mini Loaves is wonderful for breakfast. In fact, I enjoyed a couple of slices for my last breakfast in our old house in Carlisle. This fragrant banana bread also makes a great afternoon snack or sweet treat anytime.
Spiced Banana Bread Mini Loaves

You can also use this recipe to make two 9 x5-inch loaves, increase the baking time to about 50 minutes – 1 hour or until a tester inserted into the middle of a loaf comes out clean.
Ingredients
- 2 cups white sugar
- 1 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups mashed banana (from about 6 overripe bananas)
- 3 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- 1 teaspoon baking soda
- ¼ teaspoon baking powder
- 1 teaspoon salt
Instructions
- Preheat oven to 350°F. Lightly grease five or six 5 ¾ x 3-inch mini loaf pans.
- In a large bowl, using an electric mixer, beat sugar and vegetable oil to blend.
- Add in eggs, one at a time, then vanilla mixing after each addition.
- Add in the banana and stir to combine.
- In another large bowl, whisk together flour, cinnamon, nutmeg, cloves, baking soda, baking powder and salt.
- Stir flour mixture into banana mixture in 2 or 3 additions until just combined.
- Spoon batter evenly into mini loaf pans, filling about 3/4 of the way to the top of each pan.
- Bake in preheated oven for 35 – 40 minutes or until a toothpick inserted into the middle of a loaf comes out clean.
- Cool loaf pans on wire racks for 10 minutes. Remove loaves from pans, place on racks and cool completely.

Hi! I want to cut the recipe in half, but then how many eggs should I use? One or two?
Hi Rebecca, I haven’t made half of this recipe before, but since it is a quick bread, I think you could halve the recipe and use either one or two eggs and it will come out fine. You could also use one whole egg and one egg yolk. Or, you could use one and a half eggs. For the half egg, break an egg into a glass measuring cup or small bowl and then whisk it, pour out half of the whisked mixture to use in the recipe and save the rest for scrambled eggs or another recipe.
