Easy Raisin Scones – These delicious, buttery scones are so easy to put together, perfect for breakfast or a snack anytime.
I love scones of all kinds, I love eating them, of course, and I also love making my own. Scones are so easy to make, especially drop scones, such as these Easy Raisin Scones.
No kneading, rolling, shaping or cutting of the dough is required to make drop scones. You just mix up the dough, then using your hands, drop the dough in little mounds of the desired size, onto the baking sheet.
I like to make these Easy Raisin Scones on the small side, about four – five bites worth each, and this recipe yields about 18 smallish scones.
You can make these scones any size that you like, just be sure to adjust the baking time accordingly.
These Easy Raisin Scones are wonderful in the morning with a cup of coffee. They are so simple to make that you’ll have a batch in the oven by the time it takes to brew a pot of coffee. And, since they bake for only 10 minutes, you’ll have a warm, soft buttery scone in your hand in no time at all to enjoy with your coffee.
These delicious raisin scones are also great as an afternoon snack with a cup of tea, or anytime!
Easy Raisin Scones - These delicious, buttery scones are so easy to put together, perfect for breakfast or a snack anytime.
Ingredients
- 2 cups unbleached all-purpose flour
- 1/3 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 6 tablespoons (3/4 stick) chilled unsalted butter, diced
- 1 cup raisins (soaked in water for about 20 minutes beforehand)
- 3/4 cup chilled buttermilk
- 1 large egg yolk
- 1 teaspoon vanilla extract
Instructions
- Preaheat oven to 400°F. Spray baking sheet with cooking spray.
- In a large bowl, using a wisk, sift together flour, sugar, baking powder, baking soda and salt.
- Add butter and rub into flour mixture with fingertips until butter is reduced to the size of rice grains.
- Add in raisins and mix in with a spoon.
- In a small bowl, whisk together buttermilk, egg yolk and vanilla to blend.
- Add buttermilk mixture to dry ingredients; stir with a spoon until dough comes together in moist clumps.
- Gather dough into ball with your hands. Break off small clumps of dough and drop onto prepared baking sheet spacing about 1 inch apart. Clumps should be about 2 inches in diameter and about 1 ½ - 2 inches high.
- Bake in the preheated oven about 10 minutes or until scones are crusty on top and toothpick inserted into center comes out clean.
