This bright and cheerful Crock Pot Curried Carrot Soup is perfect for a light meal on a warm spring day.
It is finally starting to feel like spring here in Massachusetts. What that means is that yesterday, temperatures reached the low 50sยฐF, the sun was shining and my almost 3 year old twin girls were able to play outside without their winter coats on. They even were able to eat their lunch on our deck, which is now only half covered in snow.
In celebration of the spring like weather, I thought I’d share a spring time recipe, this beautiful Crock Pot Curried Carrot Soup.
I came across the original version of this recipe in a cookbook my mom had given me, Fix-It and Forget-It Recipes for Entertaining: Slow Cooker Favorites for All the Year Round, and knew I had to make it. I love carrot soups, I love curry in carrot soups, and thought it was a great idea to make carrot soup in the slow cooker. The soup turned out beautifully, the curry complements the sweetness of the carrots so nicely and it was so easy to make in the slow cooker.
The carrots simmer away for 2-4 hours in the slow cooker, depending on the heat setting, then you puree the soup and stir in yogurt. I use my handheld immersion blender to puree the soup right in the crock pot, which makes the process so simple, you don’t have to bother with transferring the soup to a blender or food processor and you don’t have to wash a blender or food processor either.
I love my handheld immersion blender, it’s one of those kitchen devices that once I had one, I couldn’t believe I ever got along without one. If you like to make pureed soups and don’t have a handheld immersion blender, I highly recommend you get one, you will thank me.
This bright and beautiful Crock Pot Curried Carrot Soup, either on its own, or served with a green salad and some crusty bread, is the perfect light meal for a warm spring day.
This pretty Crock Pot Curried Carrot Soup would also make an elegant first course for a special brunch or dinner for Easter, Mother’s Day or anytime!
Crock Pot Curried Carrot Soup
Notes
For step 7, if you donโt have a handheld immersion blender, you can transfer the soup to a blender or food processor to puree. Return pureed soup to slow cooker and continue with remaining steps
Ingredients
- 2 tablespoons olive oil
- 2 cups diced onion
- 1 tablespoon minced garlic
- 1 teaspoon curry powder
- 1 tablespoon flour
- 4 cups sliced carrots (from about 6-8 carrots)
- 4 cups chicken or vegetable broth
- salt and freshly ground pepper to taste
- 1 ยฝ cups plain yogurt
- additional plain yogurt or sour cream and sliced green onions for topping (optional)
Instructions
- Heat olive oil in a large skillet over medium heat, add onion and garlic and cook until softened, about 5 minutes.
- Stir in curry powder and flour, cook for 30 seconds.
- Transfer onion mixture to a 5-6 quart slow cooker.
- Add carrots and chicken (or vegetable) broth to slow cooker.
- Place chicken in a 6-quart slow cooker.
- Cook on high heat for 2 hours or on low heat for 3-4 hours or until carrots are softened.
- Using a handheld immersion blender, puree soup in slow cooker until smooth.
- Season to taste with salt and pepper.
- Add yogurt and stir to combine.
- Serve soup and top with a dollop of yogurt or sour cream and a sprinkling of sliced green onions, if desired.
