Crock Pot Curried Carrot Soup

It is finally starting to feel like spring here in Massachusetts. What that means is that yesterday, temperatures reached the low 50s°F, the sun was shining and my almost 3 year old twin girls were able to play outside without their winter coats on. They even were able to eat their lunch on our deck, which is now only half covered in snow.

In celebration of the spring like weather, I thought I’d share a spring time recipe, this beautiful Crock Pot Curried Carrot Soup.

Crock Pot Curried Carrot Soup

I came across the original version of this recipe in a cookbook my mom had given me, Fix-It and Forget-It Recipes for Entertaining: Slow Cooker Favorites for All the Year Round, and knew I had to make it. I love carrot soups, I love curry in carrot soups, and thought it was a great idea to make carrot soup in the slow cooker. The soup turned out beautifully, the curry complements the sweetness of the carrots so nicely and it was so easy to make in the slow cooker.

The carrots simmer away for 2-4 hours in the slow cooker, depending on the heat setting, then you puree the soup and stir in yogurt. I use my handheld immersion blender to puree the soup right in the crock pot, which makes the process so simple, you don’t have to bother with transferring the soup to a blender or food processor and you don’t have to wash a blender or food processor either.

I love my handheld immersion blender, it’s one of those kitchen devices that once I had one, I couldn’t believe I ever got along without one. If you like to make pureed soups and don’t have a handheld immersion blender, I highly recommend you get one, you will thank me.

Crock Pot Curried Carrot Soup

This bright and beautiful Crock Pot Curried Carrot Soup, either on its own, or served with a green salad and some crusty bread, is the perfect light meal for a warm spring day.

This pretty Crock Pot Curried Carrot Soup would also make an elegant first course for a special brunch or dinner for Easter, Mother’s Day or anytime!

I adapted this recipe from Fix-It and Forget-It Recipes for Entertaining: Slow Cooker Favorites for All the Year Round. It’s a wonderful cookbook filled with homey recipes from home cooks from all over the United States. I made this soup in my 6-quart Crock Pot brand slow cooker, which I love, and pureed it with my Kitchen Aid brand immersion blender. 7. It started warming up here, then this morning we had snow! But maybe if I try a bowl of this warm, sun-colored soup it will feel like spring anyway 🙂

  8. I love anything flavored with curry powder! This soup looks delicious and being done in the slow cooker makes it even more convenient.

    • Thanks so much Michelle! We’re not quite into total spring like weather here either, but I am so ready!

    • Hi Jenna, yes, absolutely you could use curry paste, just be sure to adjust the amount to suit your taste, you may need a little bit more paste than powder. Hope you give it a try and enjoy!

  10. We do not have spring over here yet, it looks more like autumn. But next week seems to be improving and spring will be here. The tulips are almost blooming. We will try this soup, and hopefully it can be served outside.
