Reaching Record Snowfalls
The cold and snowy winter continues here in the Boston area. In fact we are reaching record snowfalls and with another snow storm on its way tonight through tomorrow, we may break the area’s snowfall record. Yay! {sigh}
In honor of the continued snow, today, I have another wonderful comfort food recipe for you, — Slow Cooker Guinness Steak and Black Bean Chili. This hearty satisfying chili is chock full of steak, black beans and veggies. The Guinness provides a malty, richness that really complements the steak and black beans nicely.
My 7 year old son is a steak lover and this is one of his favorite chilies. We grill steak often during the warmer weather. But this winter, our grill, which is outside on our deck, as you may have guessed, has been covered under 6+ feet of snow. This Slow Cooker Guinness Steak and Black Bean Chili is a wonderful way to make steak indoors using your slow cooker. It is so easy and delicious.
Roofs Collapsing Due to Snow
While I’m on the subject of our deck – my parents called the other day, they’ve been hearing about all the roofs collapsing in the Boston area due to snow and they were worried about our deck.
Now, my husband has been diligently removing snow from our roof. Nearly every day he’s been up there, in order to prevent ice dams. However the snow has continued to pile up on our deck. It was unlikely that it would collapse, but better safe than sorry. So, my husband and I spent a good chunk of the other day clearing snow from the deck. Mom and dad, if you are reading this, please put your minds at ease!
This Slow Cooker Guinness Steak and Black Bean Chili is delicious served along with a tall glass of frothy Guinness, or with another favorite Irish beverage. A wonderful accompaniment to this chili is a nice thick slice of Irish Soda Bread with Caraway Seeds and Raisins.
This Slow Cooker Guinness Steak and Black Bean Chili is perfect for your next St. Partick’s Day celebration or anytime you’re looking for some delicious, hearty, comfort food.
Slow Cooker Guinness Steak and Black Bean Chili
Notes
You can substitute another (12-15 oz) bottle of dark beer (~5% abv) for the Guinness.
Ingredients
- 2 tablespoons vegetable oil
- 2 ½ pounds boneless NY sirloin steak (or top sirloin steak), cubed
- 3 (15-oz) cans black beans, rinsed and drained
- 2 (10-oz) cans chili-style diced tomatoes with green chilies, undrained (I use Rotel brand)
- 1 ½ cups chopped onion (from about 1 ½ medium onions)
- 1 red bell pepper, chopped
- 4 garlic cloves, minced
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 (15 oz) can Guinness Irish stout (or other dark beer)
- 2 tablespoons water
- 2 tablespoons cornstarch
- shredded cheddar for topping (optional)
- light sour cream for topping (optional)
- chopped green onion for topping (optional)
Instructions
- Pat beef cubes dry with a paper towel to remove any excess moisture.
- Heat oil in a large skillet over high heat. Add steak, working in batches if necessary, and cook 3-4 minutes, stirring constantly, until browned.
- Place steak in a 6-quart slow cooker.
- Add in black beans, diced tomatoes, onion, red bell pepper, garlic, chili powder, cumin, salt and sugar.
- Pour Guinness over mixture in cooker.
- Cover slow cooker and cook on low heat for 8 hours.
- When there is 10 minutes left of cook time, create a slurry by whisking together water and cornstarch, in a small bowl, until cornstarch is dissolved. Add slurry to slow cooker and stir to combine. Cover and cook on high heat for remainder of cooking time.
- Serve chili and top with shredded cheddar cheese, light sour cream, chopped green onion, if desired.

Could you substitute chunks of pork meat for the beef? It look really good but I have a ton of pork in the freezer.
Hi Anna, I’ve never tried this particular recipe with pork meat, but it would likely work, depending on the cut. I’ve done other similar recipes in the crock pot with pork butt/shoulder meat, and they’ve turned out great. If you give it a try, please let me know how it goes!
Caution to those substituting a different beer for Guinness – check the abv of the substitute and keep it at around 5%! We couldn’t find Guinness so we substituted our favorite craft beer and the abv was over twice that of Guinness and the alcohol did not cook out. It took an extra 3-4 hours on high to get most of it cooked out.

Hi Betsy, yes, that should work. Just be sure to stick a fork in a piece of the steak and make sure it is tender before serving. Hope you enjoy!

Curious, I am guessing the “slurry” is the thickening agent? Never used cornstarch and water in my chilli before that’s why I asked. I like my chilli thick.

So hearty and delicious. I’m not a huge beer drinker…or a beer drinker at all unless it’s that fru-fru stuff in form of flavored beers, but I LOVE foods cooked with beer, the flavor is intensified and it dish itself is heartier.
