Two Berry Vanilla Chia Seed Pudding Parfaits – these protein rich parfaits are great for breakfast or a healthy snack anytime.
I’ve frequently mentioned my love of chia seeds. They are a super food, full of omega-3 fatty acids, protein, antioxidants and fiber and they are so versatile. I like to use chia seeds in smoothies such as Strawberry Banana Chia Seed Smoothies, and to make puddings and parfaits such as Coconut Almond Chia Seed Pudding and Orange Creamsicle Chia Seed Parfaits.
Today, I have a new chia seed parfait recipe to share, perfect for the upcoming summer berry season, these light and refreshing Two Berry Vanilla Chia Seed Pudding Parfaits.
These Two Berry Vanilla Chia Seed Pudding Parfaits are so easy to make. First, prepare the vanilla chia seed pudding by whisking together vanilla soy milk with some chia seeds in a small mixing bowl. Cover and refrigerate for at least three hours or until set. I like to prepare the pudding the night before I plan to serve these parfaits.
Next, prepare a simple two berry compote, I used blackberries and strawberries, you can use any combination that you like. Add the berries along with some lemon juice and honey to a sauce pan and cook over medium heat until the berries release their juices, about three to five minutes. The compote can be prepare ahead of time if you want to serve it chilled, or right before assembling the parfaits if you want to serve it warm.
Finally, assemble the parfaits by layering the chia seed pudding and the berry compote in two glasses, beginning and ending with the chia seed pudding. Garnish with fresh berries and a sprig of mint if desired. And that’s it, these pretty parfaits are ready to be served. They also keep well assembled in the refrigerator for a few days.

Two Berry Vanilla Chia Seed Pudding Parfaits
Ingredients
- 1 Ā½ cups vanilla soy milk
- 6 tablespoons chia seeds
- 1 cup blackberries
- 1 cup strawberries, hulled and cut in half
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon honey (or sweetener of choice) or more to taste
- fresh berries and mint sprigs for garnish, optional
Instructions
- In a small mixing bowl, whisk together vanilla soy milk and chia seeds. Cover and refrigerate for 3 hours or until set.
- Add blackberries, strawberries, lemon juice and honey to a saucepan and cook over medium heat until the berries release their juices, about 3-5 minutes. Taste compote mixture and add additional honey or sweetener of choice, if desired. Set aside and allow to cool slightly or refrigerate until ready to serve.
- Layer chia seed pudding and berry compote in 2 parfait glasses, beginning and ending with a chia seed pudding layer. Garnish with fresh berries and mint sprigs, if desired.
- Serve immediately or cover and refrigerate. Assembled parfaits will keep in the refrigerator for a few days.
